Baja Fried Rice

This rice is easy to make, tangy and spicy! It provides so many compound flavours that mix together in harmony!

 

 

Serves: 4-6

Prep Time: 10min

Cook Time: 15min

Mise En Place:​​

  • 1 egg (optional), whisked

  • 1/2 inch fresh ginger root, finely chopped

  • 4 cloves garlic

  • 1-2 Carrots sliced finely

  • 1 red onion, Diced

  • 1 red Bell Pepper

  • 1-2 stalks celery, Finely chopped

  • 1 cup corn

  • 1 tbsp sesame oil

  • 1 tbsp turmeric

  • 2-3 tbsp oyster sauce

  • 2 tbsp soy sauce

  • 2-3 cups Basmati Rice, Cooked

  • salt to taste

  • 1 cup shrimp raw, chunked (peeled)

  • 1-3 red thai chili peppers (3 is very hot!)

  • Cilantro to top (optional)

  • Green onions to top

  • Lime Wedge to squeeze on top

Prep tips:

* Chopped Corn, carrots and celery into one bowl

* Chunk out shrimp in another bowl

*Garlic, ginger, chilis, onions in another bowl

*recipe moves quickly so having items prepped is essential*

How To Make:  **Wok works best!**

  1. ​Add sesame oil to skillet or wok

  2. Immediately add egg to scramble (optional) , cook until eggs are scrambled  

  3. Add ginger, garlic, red thai chilies, red onion and cook for 1 minute.

  4. Add veggies  (Celery, Bell Pepper, Carrots, Corn) and fry for 2-3 minutes until veggies start to tender

  5. Add shrimp (add salt on shrimp in skillet/wok) and fry until shrimp are almost fully cooked (on all sides)

  6. Add cooked basmati rice and 2 tbsp oyster sauce, soy sauce and turmeric (dry or fresh)

  7. Cut heat and add sesame oil

  8. Top with cilantro, green onions and squeeze a lime on top

Serve and enjoy!​
